Chicken Hash Recipe
Ingredients:
1 bellpepper (red); diced
5 c of chicken-breast
1 onion (medium); diced
1 bellpepper (green); diced
1/8 tsp of salt
3 c chicken broth
2 celery stalks; diced
2-3 c of boiled water
3 Tbsps of paprika
2 tsps of powdered curry
1/2 tsp of basil (sweet)
1/4 tsp of pepper (black)
Almonds; toasted
1 c of roux
Instructions:
In fry pan, you cook the chicken in oil ’til golden-browned. Then saute the celery, onions & bellpeppers ’til tender.
You heat the broth ’til boiling. Make the roux. You mix the veggies, chicken, broth & seasoning w/ roux.
Have dish baked in heated (350-degrees F) oven for 15-20 mins. Best when served w/ rice that was cooked.
For the roux: You mix 1/2 c of all purpose flour w/ 2 Tbsps of margarine or corn-based oil in fry pan ’til golden-browned.
