Cheesy Eggplant Casserole Recipe
Ingredients:
1 pc of eggplant (medium); peeled and diced
3/4 c of breadcrumbs (soft)
2 Tbsps of butter (unsalted)
1 c of milk; at room temperature
2 Tbsps flour
2 tsps of onion; grated
1 Tbsp of catsup
1/2 tsp of pepper (black)
1 tsp of salt
1/16 tsp of cayenne pepper
1/2 tsp of Worcestershire
2 pcs of eggs; beaten slightly
6 oz of cheese (American or Cheddar); cut to small pieces
Instructions:
Preheat the oven (350 degrees F). Grease a 1-1/2 quart casserole. Steam the diced eggplants or saute till tender. Place on a bowl with crumbs; toss them well.
Melt the butter on a saucepan then add flour; stir thoroughly then add the milk. Continue cooking and stirring till thick. Add catsup, seasonings, and onions; stir thoroughly. Add the cheese; stir till melted then add the eggs and stir constantly.
Mix the mixture of eggplant with the sauce. Transfer on the casserole and bake for 45 mins.
