Seafood Tortilla Casserole Recipe
Ingredients:
2 cloves of garlic (large); minced
12 – 14 pcs of tortillas (corn); quartered
1 pc of onion (medium); chopped finely
1 regular can of soup (cream of chicken)
Nutmeg (ground)
Pepper; ground fresh
1 pack of spinach (10 ozs, frozen); thawed & drained well
8 ozs of natural meat of crab, or
Shrimp; peeled, precooked & chopped roughly
2 c of cheese (Monterey-jack); shredded
1 c of milk
Instructions:
Preheat the oven (350 deg F). Next, combine onion, soup and garlic in deep bowl. Put in pepper and nutmeg. Divide the mixture into half. Then, add crab, cheese and spinach to first half and milk into other one.
Spread 1/2 of tortillas into base of 13×19″ greased baking deep dish. Evenly spread the spinach-seafood mixture onto the tortillas. Top w/ the rest of tortillas. Evenly pour soup-milk mixture onto deep dish.
Cover w/ foil then bake about half an hour. Uncover then bake about 5 – 10 mins more ’til top becomes browned. Chicken may be used in place of seafood. Pepper jack can be used in place of Monterey-jack.
