Quick Cajun Skillet Recipe
Ingredients:
1 c of rice (long grain)
1 tsp of canola oil
8 ozs of kielbasa (turkey)
1 pc of onion (large), about a cup if chopped
1 sweet pepper (green, large), about 1.5 cups if chopped
2 tsps of bottled garlic (minced)
1 tsp of seasoning (Cajun style)
1 can of tomatoes (seasoned, 14.5 ozs); diced
1 can of tomato sauce (w/o salt additives, 8 ozs)
1 can of red beans (kidney, 15 ozs)
Instructions:
Bring two cups water (unsalted) to boil inside a saucepan (2-quart). Add rice and cover, lower heat then simmer about 17 mins. Then, heat oil in 12″, nonstick, extra-deep skillet over medium heat.
Peel then chop onion coarsely adding to skillet while being chopped. Rinse then seed sweet pepper; cut to bite-size pcs. Add to skillet and raise heat (medium-high).
Cut link of kielbasa into half-lengthwise. Cut every half to 1/4″ slices then add to skillet while cutting. Cook, frequently stirring, for two mins or ’til onions become tender or start browning slightly.
While kielbasa cooks, put seasoning (Cajun) and garlic in. Blend in tomato sauce and tomatoes; lower heat (medium-low). Meanwhile, rinse beans, drain then add to skillet.
Thoroughly stir then simmer ’til beans become hot. Immediately serve, pour over steamed hot rice. Makes 4 servings.
