Sherry Lamb Casserole Recipe
Ingredients:
2 lbs of lamb (lean); cubed
1 lb of small onions (white)
4 Tbsps of butter
3 Tbsps of brandy
1/4 lb of carrots; sliced
1/4 lb of turnips; sliced
1/4 lb of mushrooms; sliced
1/4 lb of beans (green); sliced
2 Tbsps of flour
1.5 c of beef stock
2 Tbsps of tomato paste
3/4 c of Cooking Sherry (Holland House)
2 Tbsps of dill leaves; freshly chopped
Instructions:
In a 12″skillet, saute the lamb into 2 Tbsps of butter. Next, heat the brandy and ignite onto meat then place the meat into a 3 quart casserole.
Saute the vegetables w/ remaining butter and stir tomato paste in w/ flour and add the broth then win.
Constantly stir to cook ’til mixture gets thick and cook for 5 mins. Combine w/ lamb inside the casserole and sprinkle w/ dill.
Bake w/ cover for 1-1/4 hrs over 350 deg F or ’til vegetables and meat become tender. Freeze or serve; makes 6 servings
