California Rice Casserole Recipe
Ingredients:
1 c of chopped onion
1/4 c of butter (unsalted)
4 c of rice (cooked)
2 c of sour cream (dairy)
1/2 tsp of salt
1 c of cheese curd (Cottage cheese)
1 pc of bay leaf
1/8 tsp of pepper (black)
2 c of grated cheese (sharp Cheddar)
3 cans of chiles (green, small); drained
Parsley (fresh); chopped
Instructions:
Saute the onion on butter till golden. Take out from the heat then add rice, cheese curd, (sour) cream, salt, pepper, and (bay) leaf; stir thoroughly. Layer one-half the mixture of rice on buttered (baking) dish, one-half of chiles, then sprinkle one-half of cheese; do another layering.
Place inside the oven and bake (375 degrees F) for half an hour. Sprinkle parsley.
