Burrito Supreme Casserole Recipe
Ingredients:
8 pcs of tortillas (flour, 8-inch)
1-1/2 c of juice (tomato)
1 pk of seasoning mix (taco)
1 Tbsp of oil (vegetable oil)
1/2 lb of beef (ground)
16 oz of canned beans (refried)
3 c of shredded cheese (Cheddar)
1 pc of avocado (small); peeled, pitted, and cubed
1 Tbsps of juice (lemon)
1-1/2 c of lettuce; shredded
1 c of tomato; chopped
Instructions:
Wrap the tortillas in foil securely. Bake (350 degrees F) for fifteen mins till heated through. Combine (tomato) juice, oil, and taco mix; stir thoroughly. Set on the side.
Cook the beef on a skillet till browned; stir constantly to crumble then drain. Add half cup of the mixture of (tomato) juice, and beans; stir thoroughly. Let it boil then cover; lower down the heat. Let it simmer for 5 mins till heated through; stir occasionally.
Take out from the heat then place quarter cup mixture of beef and 2-1/2 tablespoons of cheese on each of tortilla, on its center. Roll them up then place on a slightly greased 13×9 inch baking glass dish, with seam facing down. Pour over the remaining mixture of (tomato) juice and cover. Bake (350 degrees F) for 30-35 mins.
Remove the cover then sprinkle the rest of cheese. Place back inside the oven and bake for another 5 mins or till cheese has melted.
Toss avocado with (lemon) juice. Add avocado, tomato, and lettuce onto the casserole and serve at once.
