Boot Kickin’ Tortilla Casserole Recipe
Ingredients:
tri-tip (cooked in a crock pot)
1 piece of onion (large)
Garlic (as much as desired)
Powdered (as much as desired)
1 canned sauce (tomato)
1 canned sauceN (El Pato)
1 canned diced chilies (green)
12 pieces of tortillas (corn)
1 c of small curd (Cottage cheese)
1 piece of egg (large)
8 ounces of cheese (Jack)
8 ounces of cheese (Marble)
For the garnish:
Sour cream (dairy)
Slivered scallions
Tomatoes; chopped
Instructions:
Saute the garlic and onions then add meat and diced chilies; sprinkle over the powdered chili then add the sauces. Simmer it for fifteen mins. While waiting, fry the tortillas on heating oil, individually. Place them on a paper towel to absorb excess oil then cut to quarters.
Combine cheese curd with egg; beat thoroughly then set on the side. Spread a third of the mixture of meat on the base of 9×13-inch baking glass dish then layer it with the (Jack) cheese, one-half the mixture of cheese curd, then one-half the tortillas. Do the layering again and place the (Marble) cheese on top.
Bake (350 degrees F) for half an hour, uncovered, till heated thoroughly and the cheese has melted. Garnish as desired. Serve at once.
