Blintz Casserole Recipe
Ingredients:
1-1/4 c of flour (all purpose)
1 tsp of baking powder (Calumet)
1/2 c of softened butter
3 Tbsps of sugar (refined)
2 pcs of eggs (large)
3/4 c of milk
16 oz of creamed cheese curd (Cottage cheese)
2 Tbsps of softened butter
1 pc of egg (large)
1 Tbsp of sour cream (dairy)
1/2 tsp of salt
Instructions:
Preheat the oven (350 degrees F). Slightly grease 9-inch baking glass dish. Combine flour, Calumet, sugar, and butter inside the bowl; blend them well. Add milk and eggs; stir thoroughly.
Combine cheese curd, egg, butter, (sour) cream, salt, and egg on another bowl; blend thoroughly. Place half of flour mix on the dish, top with cheese mix then pour over the remaining mixture of flour. Bake for 50 mins till golden and puffed. Let it cool then cut to squares.
