Black Bean Casserole Ole Recipe
Ingredients:
1 c of onions; chopped
3/4 c of cornmeal (yellow)
2 tsps of chili powder
1 c of evaporated milk (skim)
1/4 c of water
16 oz of canned corn (whole kernel); drained
16 oz of canned beans (black); drained then rinsed
16 oz of canned tomatoes (stewed)
4 oz of canned diced chiles (mild green)
Instructions:
Preheat the oven (350 degrees F). Spray nonstick cooking spray on an 8 inch pan. Combine onions, cornmeal, chili powder, milk, water, corn, beans, tomatoes, and chiles inside a bowl; mix thoroughly and transfer onto the pan. Place inside the preheated oven and bake for forty-five mins, uncovered.
