Beef Chili Cheese Fries Recipe
Ingredients:
2 c of onions (yellow); chopped
2 Tsbps of veggie oil
Salt (to taste)
1 Tbsp of chili powder
Cayenne pepper (to taste)
2 lbs of beef (ground)
2 tsps of cumin (ground)
Crushed pepper (red, to taste)
2 tsps of oregano (dried)
2 Tbsps of garlic; chopped
3 c of peeled tomatoes (fresh or canned); seeded then chopped
3 c of broth (beefsteak or beef)
2 Tbsps of tomato paste
2 Tbsps of flour (Masa Harina)
Vegetable oil (for deep frying)
2 pcs of potatoes (Idaho, large); peeled then cut to shoestrings, rinsed with cold
1/2 lb of grated cheese (Cheddar)
1/2 lb of grated cheese (Monterey Jack)
1 c of sour cream (dairy)
1/2 c of sliced jalapenos (pickled)
water then patted dry
Instructions:
Heat oil on a pan above moderate heat then add onions and season salt & cayenne; cook them for 2 mins till tender. Add beef, cumin, powdered chili, oregano, and crushed pepper; season then cook them for 5-6 mins till beef becomes brown. Add garlic, 2-1/2 cups of stock, tomatoes, and paste; let it boil then reduce heat into medium-low.
Let it simmer for an hour till meat becomes tender; stir occasionally and skim the fat floating atop. Combine flour with remaining stock; blend thoroughly and gradually add onto the saucepan. Stir thoroughly till thick then continue cooking for half an hour. Season it again.
Heat oil, for deep frying, (360 degrees F) then cook the potatoes by batches for 3-4 mins till golden. Place onto paper towel(s) to absorb excess oil. Season.
Preheat oven (400 degrees F). Cover fried potatoes onto the base of a rectangular glass baking dish. Combine Monterey Jack and Cheddar cheeses then sprinkle onto the potatoes. Bake till cheese has melted, about 3-4 mins.
Remove from oven then spoon chili above the mixture. Garnish jalapenos and (sour) cream. Serve at once.
