Beef and Mushroom Casserole Recipe
Ingredients:
1 lb of lean beef (ground)
1 & 1/2 c of mushrooms; sliced
2 crushed garlic cloves
1/4 tsp of pepper
1 Tbsp of chopped basil
1 pack of risotto-mix w/ garden veggies (5 & 1/2 oz)
1 c of chopped red bellpepper
1/2 tsp of salt
2 Tbsps of grated cheese (Parmesan)
Instructions:
Follow package instructions in preparing risotto-mix. In stick-free skillet. Cook the beef ’til browned then add bellpepper, mushrooms & garlic on pan placed over mid-heat for 8-10 mins or ’til beef loses it pink color. Break beef into crumbles.
Remove drippings then season w/ pepper & salt. Stir the risotto-mix into the beef mix then sprinkle w/ basil & cheese.
