Barley with Brown Butter and Scallions Recipe
Ingredients:
3 qts of water
3 c of barley; hulled
4 small scallions
2 tsps of salt
1/4 c of butter
Pepper
Salt
Instructions:
Pour water over 5-6 qts pot. Season w/ salt then stir. Allow to boil then add barley while stirring. Adjust to mid-heat then cook about 45 mins.
Meanwhile, place butter into saucepan placed over mid-heat. Stir well ’til butter is melted. Immediately tilt & tip your pan in order for butter to move around pan’s bottom to avoid burning.
Once it becomes caramel-colored, remove pan immediately from heat. Set it aside.
Put your scallions in chopping board then remove end of roots and cut 4-5″ of green-tops. Chop onions finely then set them aside.
You would know that your barley’ s cooked (45 mins) by slowly scooping some grains w/ spoon then taste. If they are tender & chewy, that means that your barley’s perfectly cooked. Pour water w/ barley through your strainer.
You measure three cups barley then place into serving platters. Add your browned butter & scallions. Season w/ pepper and salt as necessary.
